Recipe: Easy-to-bake Banana Cake

This is probably the easiest banana cake recipe; you don’t need an electric mixer, just basic baking tools. This tried-and-tested banana cake is moist, and full of banana goodness.

Mandie has fine-tuned this recipe to suit her taste buds. A simple sharing to satisfy your sweet tooth!

Banana cake ready to serve

Ingredients (makes 1.2kg):

  1. 180g salted butter
  2. 150g – 180g caster sugar (depending on sweetness of bananas)
  3. 250g plain flour
  4. 4 medium eggs (50-55g each)
  5. ½ teaspoon vanilla extract
  6. 8 medium bananas, approximately 500g mashed (we normally use pisang berangan or ang bak chio in Hokkien)
  7. 1 teaspoon baking soda
  8. 1 teaspoon baking powder

Method:

  1. Cream the butter and caster sugar.
  2. Add in vanilla extract, add in eggs one at a time. Mix well.
  3. Add in mashed bananas. Mix well.
  4. Sift flour with baking soda and baking powder into mixture. Fold it in gently until flour has disappeared. Do not overmix.
  5. Pre-heat oven to 180°C, top and bottom heat. Bake for 50 minutes, or until a skewer inserted into the centre of the cake comes out clean. If the top layer turns brown after 30 minutes, cover with a piece aluminium foil.
  6. Remove from oven and let it cool before serving.
